Some sandwiches just hit the spot, and this Eggplant Mozzarella Sandwich is one of them.

It’s crispy, cheesy, garlicky, and packed with fresh flavor, making it a great option when you want something simple but that still feels a little special.

Whether you’re making lunch for yourself, looking for a substantial snack, or putting together an easy dinner, this is a sandwich worth adding to the rotation.

Combining broiled eggplant, melted fresh mozzarella, juicy tomatoes, fresh basil, and crispy garlic-rubbed baguette, it’s got all those wonderful summer flavors we love.

Ingredients

Here’s what you’ll need:

Eggplant: Choose a medium eggplant and slice it lengthwise into thin slices so it cooks quickly under the broiler.

Fresh mozzarella: Fresh mozzarella melts beautifully over the eggplant, but you can also use grated or low-moisture mozzarella.

Tomato and basil: Meaty tomatoes like the classic Beefsteak are perfect because they offer a great balance of juice and structure that doesn’t make your bread soggy, but truly, you can use any type you have on hand.

Baguette: A crisp baguette gives the sandwich texture and holds up well to the eggplant and mozzarella, but again any bread will work here.

Garlic and olive oil: The garlic isn’t overwhelming, but adds just a hint of Mediterranean flavor.
