Smacked Cucumber Salad with Radishes

Laurie Colwin once said, “[chicken] salad is like the little black dress, it is chic and adaptable and can be taken anywhere. You can dress it down and feed it to a child, or dress it up and serve it at a dinner party. You can accessorize it in an interesting way and astonish your friends at lunch.” When you start looking at salads that way, you’ll never find them boring or bland. And if you want an excellent salad that is both easy and bold, may I introduce you this wonderful smacked cucumber salad with radishes.

This is a very basic recipe that you can dress up and adorn however you see fit. The dressing can benefit from additions such as honey or maple syrup, or perhaps a dollop of dijon mustard. You can use whatever fresh herbs you have and as many types as you want. This primitive version is bright and zesty as is, and you only really need a handful of ingredients. 

A marvelous technique

Smashed cucumbers are truly a marvel. They reject any idea of uniform chopping so it cuts down time and effort. And they’re so crunchy! I adore making salads where I spend precious time slicing the cucumbers into fine slices, but I truly love the rustic look and texture of this technique. I’d recommend using red onion for this, but I only had yellow and it’s a perfectly fine substitute.

Because the dressing is so simple, I don’t even bother making it in a separate bowl, which means less dishes to wash. This is one of those recipes where eyeballing is not only entirely feasible, but entirely encouraged.

When it comes to the radishes (and the onions), my personal preference is slicing them as finely as humanly possible. In fact, if you own a mandolin – which I don’t – then it’s the best tool for the job. But if you like a really chunky salad, halving the little things will be just fine – and quicker.

Smacked Cucumber Salad with Radishes

Ingredients

  • 4 Persian cucumbers

  • 5 radishes, thinly sliced

  • 1/2 small red onion, thinly sliced

  • a handful of fresh parsley

  • 1 tbsp apple cider vinegar

  • 2 tbsp olive oil

  • 1 lemon, zest and juice (1 tbsp)

  • salt and pepper

Directions

  • Trim the ends off the cucumbers. Using the flat of a large knife, carefully bash the cucumbers repeatedly until they split and break. Cut them into bite-sized chunks.

  • Transfer the cucumbers to a strainer over a bowl. Add half a teaspoon of salt and leave to sit while you prepare the other ingredients, to draw out the moisture.

  • Thinly slice the onion and radishes.

  • Discard the cucumber liquid. Add cucumbers, onion, and radishes to the bowl. Add the parsley, apple cider vinegar, olive oil, lemon zest and juice. Mix to combine. Transfer to a serving platter and serve.
