I love a quick dinner that turns a humble vegetable into comfort food. And this creamy zucchini pasta is exactly that. Ready in just 30 minutes, it features a creamy sauce and grated zucchini that cooks down until sweet, golden, and caramelized. It’s a fast, family-friendly weeknight dinner that tastes luxurious without requiring hours in the kitchen.

This is one of my favorite ways to put my summer squash to work and it was inspired by a dish made by an Italian friend who, as we chatted away in the kitchen, swiftly grated some zucchini and some Parmesan, added cream to a skillet, and suddenly we were having one outstanding pasta dinner.

Zucchini: The star of the show. As it cooks down, the zucchini becomes caramelized and almost silky, creating the foundation of the sauce.
Onion: Adds sweetness and depth, balancing the richness of the cream and Parmesan.
Garlic: Along with the onion, it builds the foundational flavor profile of the dish.
Red Pepper Flakes: Just enough heat to cut through the richness and add a nice kick.

Helpful Swaps
- No zucchini? Yellow summer squash works just as well and can be used interchangeably.
- For a lighter sauce, replace some of the heavy cream with half-and-half. The sauce won’t be quite as rich, but it will still be creamy.
- Pecorino Romano can be substituted for Parmesan for a sharper, saltier flavor.
- If you enjoy a little more heat, increase the red pepper flakes to taste.
- Finish the pasta with fresh basil, parsley, chives, or whatever fresh herbs you have on hand .
- Add peas, spinach, or asparagus during the last few minutes of cooking to incorporate more vegetables into the dish.
- While long noodles work particularly well with the creamy sauce, short shapes such as rigatoni, penne, or fusilli are excellent alternatives.
- A splash of white wine added while cooking the zucchini can provide acidity if you don’t have lemon on hand.
Helpful Tips
Salt your pasta water generously. It’s your first opportunity to season the dish.
Cook the zucchini until it is very soft. The more it breaks down, the creamier the finished sauce will be.
Reserve some pasta water before draining. A splash can help loosen the sauce and encourage it to cling to the pasta.
Taste before serving and adjust with additional salt, pepper, lemon juice, or red pepper flakes as needed.

Creamy Zucchini Pasta
Ingredients
- 7 oz pasta (linguini, spaghetti, or pappardelle)
- 3 medium zucchini, grated
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- ½ tsp red pepper flakes
- ⅓ cup heavy cream
- 1 lemon
- ½ cup grated Parmesan, plus more for serving
- fresh basil
- salt and pepper
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of starchy pasta water, then drain the pasta and set aside. While the pasta cooks, grate the zucchini on the large holes of a box grater.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Stir in the garlic and red pepper flakes and cook for 1 more minute until fragrant.
- Add the grated zucchini to the skillet and season with salt and pepper. Cook, stirring occasionally, for 8 to 10 minutes. The zucchini will release its moisture, break down, and turn golden brown.
- Pour the heavy cream into the skillet and stir to combine with the zucchini. Reduce heat to low. Stir in about ¼ cup of the reserved pasta water to make it glossy, adding more if needed.
- Transfer the cooked pasta into the skillet. Add the lemon juice and Parmesan cheese, tossing to coat the pasta. Taste and season with more salt and pepper if needed. Top with extra Parmesan and fresh basil. Serve.
