Cucumber sandwiches never sounded particularly interesting to me. When I think of a sandwich, I think of a hearty meal disguised as a snack and I tend to fill it with chunky fillings. I mean, give me protein and carbs and veggies, the whole works. So if you’re wondering why of all the sandwiches in all the world, I decided to make a Cucumber Sandwich with Green Mayo, I don’t have a very good explanation for you.
Except that maybe people change, they evolve. Or maybe they just go through weird times when they crave teeny tiny delicate sandwiches that are packed with… subtle taste. I don’t know. In any case, these are lovely and understated. They taste fresh and healthy, and sometimes that’s all you need, a not-a-lot-going-on-at-the-moment sandwich.
I wanted to brighten it up a bit so instead of butter I made a green mayo that’s very herby and tangy, so you can’t say this boring finger food. It’s not, it’s bright and green and tangy and it’s a legit sandwich, except it’s crustless. Now, I’ll admit the bread I’m using here looks a bit sad, but only because it’s gluten free bread, and if you’re familiar with gluten free bread, they can be difficult to work with. They might look a bit dry, but only because they are, and if it was up to me, I’d always go with gluten-full bread, but I have gluten-free friends who I care about dearly, so this was very altruistic of me.
Green Mayo
I wanted to simplify the mayo making process as much as possible, so it’s pretty foolproof. Toss all the ingredients into a blender and blend until smooth. This recipe calls for a hard-boiled yolk, so it’s safe and cooking the egg might the longest step in the whole process.

Cucumber Sandwich with Green Mayo
Ingredients
- 1/2 small cucumber
- 1/2 small red onion
- 1 egg yolk, hard boiled
- 2 tbsp lemon
- 2 tbsp parsley
- 2 tbsp dill
- 1/4 cup olive oil
- salt and black pepper
- 6 slices sandwich bread
Directions
- Make the green mayo: Add the egg yolk, lemon, parsley, dill, salt and pepper to add a blender. Add a little bit of the olive oil. Blend, adding the olive oil slowly, until well blended.
- Thinly slice the cucumber and onion. Cut the crusts from each bread slice.
- Spread the green mayo evenly on one side of each bread slice. Top slice with cucumber and onion, then top with the other bread slice.
- Serve.
