Ingredients
  

Roasted Chicken Livers:

  • 1lb chicken livers
  • 1 small red onion, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp smoked paprika
  • 4 sprigs thyme
  • Black pepper
  • Olive oil, for drizzling

Sandwich:

  • Hummus
  • Roasted chicken livers
  • Caramelized onions
  • 1 lemon
  • Fresh chives, chopped
  • 1 baguette

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with foil and set aside. 
  • Rinse and pat the chicken livers dry with paper towels. Trim away any connective tissue or greenish parts.
  • Toss the livers in a large bowl with the red onion, garlic powder, salt, smoked paprika, thyme, black pepper, and olive oil.
  •  Arrange the livers in a single layer on the prepared baking sheet.
  • Bake for 15-20 minutes, or until cooked through.
  • Assemble the sandwiches: Cut the baguette open and spread generously with hummus. Add a layer of chicken livers, then top with caramelized onions, squeeze with lemon, and sprinkle with chopped chives. Cut in half and serve.
