Cucumber Sandwiches with Herby Green Mayo

A simple, bright tea sandwich made with homemade herb mayo – no raw egg yolk!

Ingredients
  

Green Mayo:

  • 1 egg yolk, hard-boiled
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley
  • 2 tbsp fresh dill
  • ¼ cup olive oil
  • Salt and black pepper, to taste

Sandwiches:

  • ½ cucumber
  • ¼ red onion
  • 6 slices sandwich bread

Instructions
 

  • Prepare the vegetables: Thinly slice the cucumber and red onion. Rinse the onion slices under cold water to mellow their sharpness. Lightly salt the cucumber slices and let them sit for 5 minutes. Set aside.
  • Make the green mayo: Add the hard-boiled egg yolk, lemon juice, parsley, dill, salt, and black pepper to a blender or food processor. Drizzle in half the olive oil and blend. Continue blending while slowly adding the remaining olive oil until the mixture is smooth and well combined.
  • Assemble the sandwiches: Cut the crusts off each slice of bread. Spread the green mayo evenly over one side of 3 slices of bread. Pat the cucumber slices dry with a paper towel, then layer them over the bread with the red onion. Top with the remaining bread slices.
  • Cut the sandwiches in half, if desired, and serve.
