Cucumber Sandwiches with Herby Green Mayo
A simple, bright tea sandwich made with homemade herb mayo – no raw egg yolk!

Green Mayo:
- 1 egg yolk, hard-boiled
- 2 tbsp lemon juice
- 2 tbsp fresh parsley
- 2 tbsp fresh dill
- ¼ cup olive oil
- Salt and black pepper, to taste
Sandwiches:
- ½ cucumber
- ¼ red onion
- 6 slices sandwich bread
Prepare the vegetables: Thinly slice the cucumber and red onion. Rinse the onion slices under cold water to mellow their sharpness. Lightly salt the cucumber slices and let them sit for 5 minutes. Set aside.
Make the green mayo: Add the hard-boiled egg yolk, lemon juice, parsley, dill, salt, and black pepper to a blender or food processor. Drizzle in half the olive oil and blend. Continue blending while slowly adding the remaining olive oil until the mixture is smooth and well combined.
Assemble the sandwiches: Cut the crusts off each slice of bread. Spread the green mayo evenly over one side of 3 slices of bread. Pat the cucumber slices dry with a paper towel, then layer them over the bread with the red onion. Top with the remaining bread slices.
Cut the sandwiches in half, if desired, and serve.
