Strawberry Black Pepper Jam

This small batch Strawberry Black Pepper Jam is an easy way to use up ripe berries before they go to waste. Freshly ground black pepper adds a subtle savory warmth that makes it great with cheese, toast, and snack boards.

Ingredients
  

  • 2 cups (300 g) fresh berries (strawberries, hulled and halved if using)
  • cups (250g) granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • tsp freshly ground black pepper

Instructions
 

  • Add the berries, sugar, and lemon juice to a medium saucepan over medium heat.
  • Bring the mixture to a boil, stirring frequently to help dissolve the sugar.
  • Reduce the heat to low and simmer, stirring regularly, for about 10 minutes, or until the berries have broken down and the jam reaches your desired consistency.
  • Skim off and discard any foam that has collected on the surface (the foam is safe to eat, but removing it gives the jam a smoother texture and a clearer appearance).
  • Stir in the butter and freshly ground black pepper until the butter is completely melted and incorporated.
  • Carefully transfer the hot jam to a clean jar. Let it cool to room temperature, then seal and refrigerate until ready to serve.
