
This B.L.A.T. sandwich is so simple, but as a big sandwich fan I feel the need to share. It basically takes your classic BLT up a notch. Add a layer of avocado and a layer of sriracha mayo, and you’ll be surprised by how flavorful it gets.
I think a crucial element to a superb sandwich is the bread, so I cannot emphasize this enough: get good-quality bread! For this B.L.A.T. sandwich I like using thick slices of brioche or challah. I also recommend toasting them in a skillet with a generous drizzle of olive oil. Of course you can also just use a toaster, but despite the extra dirty dish and effort, this is my preferred method. Add butter or olive oil to a skillet and heat over medium high. Once hot, place slices of bread on the pan and cook until golden brown, flip and cook the other side.




Season each layer separately: the tomatoes, the avocado, and sriracha, so that you end up with well-rounded sandwich. I like adding a little bit of lemon juice to the smashed avocado; the acidity amplifies the flavor and keep them from turning brown.
Drizzle with olive oil (cold-pressed extra virgin olive oil is always a good idea ;)) and voila! A great little sandwich. 6 slices bacon, halved

1 avocado
1 medium tomato
1/2 small red onion
4 lettuce leaves
1 1/2 tbsp mayo
1 1/2 tbsp sriracha
4 slices brioche or challah bread
olive oil, for drizzling
lemon juice (optional)
Directions
Make the bacon: heat a skillet over medium high heat. Cook bacon until crisp, about 7 minutes, flipping halfway through. Transfer to a tower-lined plate.
Make the sriracha mayo: in a small bowl, add the mayonnaise and sriracha. Mix well to combine. Set aside.
In a separate bowl, add the avocado. Gently smash with a fork. Add a little bit of lemon juice and season with salt and pepper.
Thinly slice the onion and tomato. Season with salt and pepper.
Toast the bread.
Assemble the sandwiches: spread the avocado mixture on 2 slices of toast and the sriracha on the remaining 2. Top sriracha toast with lettuce, bacon, tomato, and onion. Drizzle with olive oil, top with avocado toast, and serve.
